Als passionierter Hobbykoch und Fleischfan habe ich mir das Victorinox Fibrox Ausbeinmesser zugelegt, um Fleisch sauber und effizient auszulösen – und ich bin absolut überzeugt.Das Messer liegt dank des rutschfesten Fibrox-Griffs sehr sicher in der Hand, auch wenn die Hände mal feucht oder fettig sind. Die Klinge ist ab Werk extrem scharf, flexibel genug für feine Arbeiten, aber dennoch stabil. Besonders beim Auslösen von Knochen, Parieren von Sehnen oder Entfernen von Silberhaut macht das Messer einen hervorragenden Job.Ich habe damit bereits mehrere Stücke Rind und Geflügel bearbeitet, das Ergebnis: saubere Schnitte, minimaler Fleischverlust und keine Ermüdung in der Hand – auch bei längeren Sessions. Es war anfangs scharf, wurde aber nach etwa einem Monat stumpf. Zum Glück lässt es sich leicht nachschärfen, daher scheint es ein guter Kauf gewesen zu sein.
