Ein hervorragender Wetzstahl für die passenden Messer (Victorinox gibt eine Härte von 65 HRC an). Der Handschutz fällt mir persönlich etwas zu schmal aus, aber das ändert nichts and dem Arbeitsergebnis - und das ist absolut ok. Man erhält problemlos die erwünschten Schärfeergebnisse.Preis-Leistung finde ich im Vergleich zu anderen Anbietern ebenfalls durchaus ok.

Sehr gutes Abziehstahl!
Der Victorinox Swiss Modern Abziehstahl wird in einer kompakten Faltschachtel geliefert.Die verchromte und geriffelte Oberfläche des Abziehstahls macht einen sehr guten Eindruck. Die Länge des Abziehstahls beträgt in meinem Fall etwa 22,5 cm und nicht 23 cm, was jedoch nicht gravierend ist. Der Kunststoffgriff ist schlicht und funktionell gehalten. Hier zeigt sich, dass Victorinox das gute Preis-Leistungs-Verhältnis realisiert, indem an nicht wesentlichen Details wie dem Griff gespart wird, aber nicht am Abziehstahl. Dies finde ich sehr positiv, da so die Funktionalität und Langlebigkeit des Produkts erhalten bleiben.Die 65 HRC (Rockwell-Härte C-Skala) des Abziehstahls eignen sich perfekt auch für hochwertige Küchenmesser, deren Rockwell-Härte in der Regel zwischen 55 und 62 HRC liegt. Dies bestätigt sich auch beim Abziehen meiner Kohlenstoffstahl-Küchenmesser. Der leichte Abrieb, den ich dort sehe, stammt klar vom Stahl des Messers und nicht vom Abziehstahl.Der mittelfeine Zug des Abziehstahls eignet sich hervorragend, um die Schneide von Messern in einem guten Zustand zu halten. Er entfernt kleinere Unebenheiten und sorgt für eine scharfe Klinge. Er eignet sich jedoch nicht, um stumpfe Messer wieder scharf zu bekommen. Dafür ist er auch nicht gedacht.Insgesamt bin ich mit dem Victorinox Swiss Modern Abziehstahl sehr zufrieden. Er ist von hochwertiger Qualität, liegt gut in der Hand und das Abziehen meiner Küchenmesser gelingt spielend. Besonders das gute Preis-Leistungs-Verhältnis macht ihn zu einem Küchenwerkzeug, das ich bedenkenlos weiterempfehlen kann.
Ideal für den Küchenalltag und das häufigere Abziehen.
Ich verwende seit einigen Jahren einen Wetzstahl von Zwilling, dessen Oberfläche mit Keramik beschichtet ist. Das ist ein eher grobes Werkzeug, das zum Abziehen mehr Kraft erfordert und den Grat nicht nur aufrichtet sondern auch Material abträgt.Der Wetzstahl von Victorinox ist im Vergleich das feinere Werkzeug, dass mit geringem Kraftaufwand verwendet werden kann. Er ist handlicher, weil er leichter (176 g statt 220 g) und mit einem längeren Griff ausgestattet ist. So ist er eine gute Ergänzung meiner Ausstattung und mit einem Preis von nur 27 € für ein Markenprodukt auch noch eine preiswerte dazu. Ich werde in Zukunft beide – ja nach Zustand des Messer – verwenden. Bei einem Produkt von Victorinox bin ich zuversichtlich, dass ich das auch für eine sehr, sehr lange Zeit kann.
Solid and Reliable Sharpening Tool
I recently received the Victorinox Sharpening. The product feels sturdy and well-balanced in the hand, making it easy to use for keeping knives sharp.Since it just arrived, I can’t comment yet on how it will hold up long-term, but first impressions are good.The packaging was fine and everything arrived in good condition. Most importantly, it looks exactly like the images shown online, so there were no surprises.Overall, it seems like a reliable tool for everyday kitchen use.

Manche mal étudié
Comme indiqué dans le titre, le manche est trop petit pour une bonne prise en main et il est plat, vraiment étrange de la part de victorinox, un manche rond et plus gros aurait été parfait, Sinon il a l'air de redonner vie au couteau mais il n'est pas pratique,je ne recommande pas cet article
