Bestellt, schnell geliefert bekommen, ausprobiert – und ich war/bin begeistert.Ultrascharf, gut verarbeitet, liegt perfekt in der Hand und ist fein ausbalanciert.Viel Geld für einen stylischen Griff ausgeben? Unnötig – Kunststoff genügt.Das ist ein Werkzeug, keine Show zum Angeben.

Das Messer ist top verarbeitet, lässt sich relativ leicht wieder scharf machen und liegt super in der Hand. Habe bisher noch kein besseres Messer gekauft!

名品20センチワイドの後続モデル
海外では最初の包丁にはこれを買えと言われるうちの一つ、シェフナイフ20センチワイドのハンドルをリニューアルしたのがモダンシリーズです。20センチのローズウッドはもう日本には残っておらず、格安のFibloxも値上がりしてしまったのでこちらをチョイス。モダンウッドは仕上げの評判が気になったのでパスしました。刃長20cmとありますが実測は21cm、身幅も52mmと菜切包丁レベルの高さ、身厚は一番厚いところで約2.3mm。切れ味は箱出しにしては及第点ですのですぐにレーザーエッジに研ぎ直すかは悩ましいところです。防錆性についてはマルチツールでその錆びにくさを実感してるので全く心配していません。そして軽い。150gは本通しではなくプラハンドルなのも影響してるはず。本通しの洋柄包丁を使っていると逆に軽すぎにも感じます。重心はちょうどロゴのVICTORI「NOX」辺りでこの辺をつまむ押さえ型がベスト、峰は面取りしてあるので指で押さえても不快感はないです。鋼材は1.4116(X50CrMoV15)ですが意外とすぐにエッジが垂れそうでもない。お値段は格安包丁天国の日本ではちょっとお高めのポジなのが残念。難点はハンドル形状のせいでシンク下にある従来の包丁ケースに刺すと斜めになってしまうこと。磁力で固定できる包丁バーの方がいいと思います。総じてとてもバランスよく作られているため、いつまでも使っていられます。トータルバランスの高さから予算が許すなら候補の一つに如何でしょうか。写真追加しました。関孫六べにふじ240mmとの比較です。
