Das Messer ist perfekt für mich, sehr scharf und liegt bequem in der Hand! Bin sehr zufrieden.

Super "Grand Maître" 20 cm
Also, das Messer kam sehr schnell an, war schon geschliffen und sehr, sehr scharf. Das Messer lieg sehr gut in der Hand. Man spürt das Gewicht des Messers, was für meine Arbeiter-Hände aber eher von Vorteil ist. Die Schneidenecke, am Griff musste ich etwas abstumpfen. die Verletzungsgefahr ist dort sehr hoch, was ich auch prompt erfahren musste. Trotz dieser Erfahrung finde ich aber gut, dass die Klinge an der Stelle nicht verdickt ist, sondern nur etwas abgerundet/abgestumpft werden sollte. Wenn dieses Messer jetzt noch Hammerschlag (schützt vor ankleben des Schnittguts) hätte, würde dieses Messer 6 Sterne von mir bekommen :o)Kullenschliff fände ich nicht so gut, da er zu nah an der Schneide ist und beim Nachschleifen irgendwann Probleme machen könnte.Aber jetzt mal ehrlich, das Messer ist, trotz etwas nörgeln, ein tolles Messer, das sehr gut in der Hand liegt, und gut aussieht. Der Name "Schweizer Messer" ist ja auch nicht schlecht :o) und wer ein längeres benötigt, nimmt eben 25 cm Klingenlänge. Das Messer sollte aber zum Schneidbrett passen, also nicht zu lang sein.

Victorinox Grand Maitre 20cm
Dieses Messer war ursprünglich auf Amazon gar nicht so leicht zu entdecken. Aufgrund von Empfehlungen in einigen Forumsbeiträgen begab ich mich auf die Suche nach dem "Grand Maitre" Modell von Victorinox und habe auf der Herstellersite die Artikelnummer und mit dieser dann hier auf Amazon das Messer selbst gefunden.Es ist etwas schwerer als meine bisherigen Stubai und WMF Kochmesser und hat eine breitere Klinge, liegt aber deutlich besser in der Hand. Gemüse lässt sich auch in grösseren Mengen mühelos fein schneiden (Zwiebeln oder Julienne), für Fleisch verwende ich ein schlankeres, elastischeres 16cm Messer.Ich empfehle allen, die bereit sind für ein gutes Kochmesser Messer 80-100 EUR auszugeben, dieses Messer in die engere Wahl zu ziehen.Eine ausführliche Produktbeschreibung gibts auch auf messerfreund de, da schreib ich nix dazuÜbrigens: das Stubai habe ich schon über 30 Jahre in Verwendung (sehr robust, für gröbere Arbeiten wie Hühnerknochen), das WMF (seit 11 Jahren im täglichen Einsatz) kommt jetzt in die Ferienwohnung. Solche Messer kauft man einmal und hat Jahrzehnte Freude dran ...

Leider voller Fingerabdrücke
Was soll ich sagen - Victorinox, wie gewohnt beste Qualität! ...leider waren das 'neue' Messer bereits mit Fingerabdrücken übersäht, und anscheinden wurde es schon einmal benutzt... aber die Schneide war, wie gesagt, absolut "normale"(also gute!) schweizer Qualität. Des Messer sollte JEDER Hobbykoch in der Küche haben!

Very good knife with a good handle
Very nice knife to hold, and scarily sharp. I wish the blade had been a little wider like my old oxo cooks knife ( now sadly discontinued) but very happy overall. Just be careful when dicing onions etc working on small jobs - wear something protective - it slices thru tomatoes and potatoes like butter.
An excellent knife when used for its intended purpose
In Response to the 1 star review left against this knife. I think the reviewers has misunderstood the purpose of this knife.Victorinox knifes are made from a softer steel than Global and IShen. Whilst this means that they can dull more quickly, it also means that they are easier and quicker to sharpen - something that a professional chef would due as a matter of routine with a steel before any shift (a Sharp knife is a safe knife!). More exotic Brands require wet-stones, diamond sharpeners and other unnecessary sharpening devices.The softer Steel also allows the knife to absorb impacts better than a knife made from a harder steel (which is more brittle - I have seen Global knives crack, chip and shatter during my career as a chef). This knife really can take a pounding from a rolling pin or mallet to drive it through a large swede, slabs of meat or lobster if needed (not recommended of course, but sometimes needs must).This is a 10 inch Chef’s knife, it is long and heavy, but that’s because its designed to be used to cut a large, dense items that a smaller knife would struggle with. It’s not designed to be used as an everyday knife for slicing and dicing (Try one of Victorinox’s excellent Santoku Knives for this) so yes, the handle is large, but then you need a large handle for purchase if you are using it to cut through something dense where you need to maintain control under pressure.For what it is designed to do, this is an excellent knife that will take abuse in a commercial kitchen environment that would destroy more exotic Brands. Think of it as the difference between a Ferrari and a Porsche. Both are fast, prestige sports cars, but whilst the Ferrari can be temperamental and fragile the Porsche is ultra reliable that could be used everyday. The Victorinox is the Porsche of Chef’s knives.
